Salmon-Cucumber Pate
Cucumber Salad Hungarian Paprika Cucumber Salad Lebanese Yogurt and Cucumber Salad Cucumber Salad Request From: "Darin " > I have planted cucumbers in my garden this year. I would like some recipes for cucumber salad. TIA Salmon-Cucumber Pate Cucumber Layer: 1 package (8 oz) cream cheese 1/2 cup sour cream 1 tsp salt 6 to 8 drops liquid red pepper seasoning 1 medium-sized cucumber, pared, seeded, and shredded 1 small onion, finely chopped 2 Tbsp snipped fresh dill Salmon Layer: 1 can (16 oz) salmon, drained and skin and bones removed 3/4 cup mayonnaise 1/4 cup onion, finely chopped 2 Tbsp lemon juice 2 Tbsp horseradish 2 Tbsp parsley, chopped 1 tsp salt 1/2 tsp paprika 2 envelopes unflavored gelatin 1/2 cup cold water 1 cup heavy cream, whipped Prepare the cucumber layer: Beat the cream cheese in a medium-sized bowl until softened and smooth. Beat in the sour cream, salt, and red pepper seasoning. Stir in the cucumber, onion, and dill. Set aside. Prepare the salmon layer: Flake or mash the salmon with a fork in a large bowl. Combine the mayonnaise, onion, lemon juice, horseradish, parsley, salt, and paprika. Set aside. Sprinkle the gelatin over cold water in a 1-cup glass measure, let soften for 5 minutes. Set the cup in simmering water, stir to dissolve the gelatin. Remove from the heat. Stir 3 Tbsp of the gelatin liquid into the cucumber mixture. Wet a 9x5x3 inch loaf pan, or 7 to 8 cup mold, with cool water, and pour the cucumber mixture in. Chill while finishing salmon layer. Stir the remaining gelatin liquid into the salmon mixture. Fold in the whipped cream. Carefully spoon salmon mixture over the cucumber layer in pan. Cover pan and chill 6 hours or overnight. To serve, run the tip of a thin-bladed knife around the top edge of the mold. Dip the mold quickly in and out of hot water. Cover with a chilled serving platter, invert, shake gently to remove. Garnish with caviar, cucumber slices, lemon, and dill. Serve with party rye bread and crackers. From: The Best of Family Circle Cookbook Hungarian Paprika Cucumber Salad Serves 4 to 6. Delicious. 3 fresh picked garden cucumbers from your vegetable garden. 1/2 teaspoon salt, plain or iodized. Freshly ground pepper to taste 1 medium fresh garden onion from your vegetable garden. 1 teaspoon granulated white sugar. 2 tablespoons white vinegar. 2 tablespoons water. 3 cloves fresh crushed garlic from your vegetable garden. (Optional) Fresh sweet Hungarian paprika. Peel the fresh garden cucumbers. Carefully slice them, paper thin. Sprinkle with salt and let stand for 15 minutes. Squeeze out the liquid from the cucumbers. Peel and slice the onion very thin and mix with cucumbers. Add the salt, pepper, white vinegar, and water to cover the vegetables. You may adjust the vinegar, salt or sugar to a sweet - sour taste. Sprinkle the crushed garlic on top of the sliced cucumbers and onion. Sprinkle Hungarian paprika generously on top. Chill for 1/2 hour. The paprika cucumbers improve in taste as they marinate. Additional Serving Hint: 1 Heaping Tablespoon fresh sour cream (Check the expiration date on the lid). Place on top of the paprika cucumber salad just before serving. Makes a nice presentation and it tastes sooooo good...! Lebanese Yogurt and Cucumber Salad 3 cups plain yogurt 12 fresh mint leaves 2 cloves garlic, peeled salt, to taste 2 or 3 cucumbers, peeled and thinly sliced Drain the yogurt in a cheesecloth-lined colander for several hours, discarding the liquid that has collected. Place the mint and garlic together in a salad bowl and crush with a little salt. Add the drained yogurt and cucumbers. Mix and chill before serving. Serves 6. Recipe adapted from "The Frugal Gourmet on our Immigrant Ancestors" Cucumber Salad 2 large cucumbers 1/2 Cup. sour cream 1/2 Cup. mayonnaise 1 Tbsp cider vinegar 1 Tbsp. sugar 1 tsp salt 1/2 tsp. freshly ground black pepper 1/4 Cup. fresh dill chopped (optional) Peel the cucumbers. Cut in half lengthwise, remove seeds and slice into thin slices. Sprinkle with salt and let set for 10 minutes in a strainer. Add the remaining ingredients to a bowl to make your dressing.
