Default Rhode Island Johnnycakes

Rhode Island Johnnycakes

1 cup cornmeal
1 tsp. salt
1 tsp. sugar
1 1/2 cups boiling water

Mix together first 3 ingredients. Add boiling water. Mixture will be
thick. Use a well greased pan. If possible, use an electric griddle or fry
pan set at 380 degrees. Drop by scant 1/4 cupfuls. Do not touch or turn
over for six minutes. Then, turn over and leave for 5 minutes.
Makes 8 to 10.

Serve with butter and maple syrup or strawberry jam
