Default Prawns (Shrimp) with Chilli. Coriander and Lime Butter

This dish is very quick, easy and quite delicious. Only 5mins. cooking
time.

Prawns (Shrimp) with Chilli. Coriander and Lime Butter

16 uncooked King Prawns 900g
100g butter
2 red chillies, seeded, chopped finely
2 Tbsp lime juice
2 Tbsp finely chopped fresh coriander
50g meslun (mixture of assorted young lettuce & other green leaves)

Shell & devein prawns, leaving tails intact, cut lengthways along prawn
backs, without separating. Melt butter in wok or large frying pan,
stir-fry prawns, in batches until changed in colour and just cooked
through. Return prawns to wok. Add chilli, juice and coriander; toss
gently to combine. Divide prawns and mesclun among serving plates.

* Serves 4 as a starter course.
* Serve with steamed rice or noodles for a main course.
