Toasted Chicken and Cheese Sandwiches

Serves 2

4 slices white or whole wheat bread
2 tsp prepared mustard
1/4 lb thinly sliced cooked chicken
2 (1-oz) slices Swiss cheese
1 egg, beaten
1 Tbsp milk
2 Tbsp butter or oleo, melted

Spread one side of each slice of bread with mustard. Place equal amounts of
chicken and cheese on two slices of bread; top with remaining bread slice.
Combine egg and milk in a shallow dish, beating well. Dip each side of
sandwiches in egg mixture. Cook in butter over medium heat in a skillet until
golden brown, turning once.
