Springtime Vidalia Onion Casserole
1/4 cup (1/2 stick) butter 7 Vidalia onions, thinly sliced 1/2 cup uncooked long-grain white rice (not Minute Rice) 5 cups boiling water 1 tsp salt 1 cup shredded Gruyere or Swiss cheese 2/3 cup half and half Preheat oven to 325 F. Melt butter in skillet and saute onions until soft and transparent, stirring frequently. Cook rice in boiling, salted water for five minutes; drain well. Spray a 9x13-inch baking dish with non-stick spray. Blend rice with onions, cheese and half and half; pour into dish. Bake for one hour. Serves 6 to 8.
