Grilled Blue Cheese Burger with Portobellas
Serves: 6 Active Time: 30 min 1 1/2 lbs Lean Ground Beef 1/2 lb Blue Cheese 6 portobella mushroom caps (about 3/4 lb), stems removed, any surface dirt brushed off 2 Tbsp Extra-Virgin Olive Oil, divided 6 Hamburger Rolls Preheat grill on HIGH 10 min. Combine ground beef and blue cheese; form into 6 patties. Drizzle both sides of patties with 1 Tbsp olive oil to lightly coat. Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil. Place patties on grill. Reduce heat to MEDIUM. Sear burgers on grill 2 min, until they have changed color about one-quarter of the way up from bottom. Turn over; sear 2-3 min. Turn again; reduce heat to MEDIUM. Close cover. Cook about 10 min until internal temp reaches 160 degrees. Check by inserting thermometer halfway into thickest part of burgers. Transfer to platter; set aside. Brush portobella caps with 1 Tbsp olive oil. Grill 4 min per side. Slice. Top burgers with mushroom slices; place in rolls and serve.
