Eggplant Parmesan
3 med. eggplants peeled and sliced 1/2" thick 2 Lg. cans spaghetti sauce 1 small can sliced mushrooms 2 8 oz.pkg. shredded mozzarella cheese 1 egg 1 cup milk 2 cups all purpose flour salt and pepper Peel and slice eggplants, place in egg and milk mixture then roll in seasoned flour. Deep fry egg plant to golden brown and place in 9x13x2 pan. Pour spaghetti sauce over fried eggplant, sprinkle mushrooms over mixture. In pre heated 400* oven, bake 45min.or until sauce is bubbly. Remove from oven and sprinkle mozzarella cheese on top. Place back in oven until cheese has melted approx. 10 min. -- Rec.food.recipes is moderated by Patricia Hill at .
