Default Swedish Style Dill Herb Fillets

Swedish Style Dill Herb Fillets

2 lbs. fillets of red snapper or a firm-fleshed fish
3/4 tsp salt
1/2 tsp fresh ground pepper
1/2 cup olive oil
1 1/2 cup minced parsley
1 Tbsp. minced shallots, freeze-dried or fresh
1 tsp Dill Weed
pinch of oregano
1/4 cup fresh squeezed lemon juice

Arrange fish in a single layer in an oiled shallow baking dish. Sprinkle
with oil, parsley, shallots, Dill Weed and oregano. Bake in a preheated
350 oven until flesh barely separates when tested with a fork, 15-20
minutes. Baste twice with pan juices while baking. Remove fish to a
serving dish. Blend lemon juice into a pan drippings, then pour over fish
