Hi everyone -
Went to a chain Mexican restaurant called Rio Grande and they have this
sweetish dip that they serve at lunch with fruit, but I can't decipher
what's in it, and they won't tell.
>From what I can gather, it's some type of yogurt (plain? vanilla?), as it
has a hint of acidity. It's creamy white in color and consistency, perhaps
a
bit frothy. There is some undertone that I cannot figure out. It's fairly
thin as well.
Any ideas??

Subject: Chocolate Sour Cream Ice Cream
Chocolate Sour Cream Ice Cream sounds great, right. Any reason why it
shouldn't taste great? Has anybody had any experience making ice cream
from sour cream? I personally don't like half-and-half so I want to
try and avoid it. I am guessing something like bring pint of heavy
cream to almost boiling, pour on to 4oz chopped up good quality dark
chocolate, allow to stand, covered, for 5 minutes, whisk by hand till
smooth. Add 1 pint sour cream, whisk till smooth. Chill. Add to ice
cream machine and churn till ice cream is made.
Any reason why this would taste bad? I want to keep excess sugar out
so the sour cream flavor will stand out, but maybe a 1/2 cup should be
added to the milk. I like to make my ice cream without egg yolks, but
perhaps making a custard would be good?
Let me know your thoughts/recipes.
