Default Zucchini Cookies

Zucchini Cookies

2 cup zucchini, shredded and drained (don't peel)
1 cup sugar
1 cup brown sugar, packed
1 cup butter flavored Crisco
2 eggs
1 tsp salt
1 tsp baking soda
3 1/2 cup flour
1 cup raisins, optional

Directions:

Combine zucchini, sugar, brown sugar, Crisco and eggs, mix well. Add salt,
baking soda, flour and raisins. Drop by teaspoon onto greased cookie sheet.
Bake at 350 F for 10 to 12 minutes. Frost with cream cheese frosting
while still hot (optional).
