I am looking for a casserole made witgh eggplants and tomatoes. It had
Parmesan and mozarella cheese scattered over the top but it was the flavor
of the eggplant underneath which made it special. The eggplant was not
fried but was still very tender. I am pretty sure it is from some low
calorie cookbook. If any of these hints sound like something you have a
recipe for, please send it in. Thanks so much.
