Bajan/Barbadian ColeSlaw

1 Small head of Cabbage
1 Medium Size Carrot
1 Level Tbsp white/brown sugar (white preferably)
1/2 lime juice
Mayonnaise
White Pepper

Grate cabbage and carrot finely, then squeeze the lime juice over it all
and stir. Add as much mayonaise to get everything mixed up and together,
after add the sugar, then drizzle some white pepper all over it. You can
vary this recipe by adding a couple of raisins or even cubes of English
apples. Enjoy as a side to rice(and stew), macaroni pie, fries and it goes
wonderfully with sandwiches and burgers
