Oriental Chicken Salad
Makes 6 main dish servings 13 3/4 or 14 1/2 ounce can chicken broth 1 cup Uncle Ben's Converted Rice 1/2 cup vegetable oil (use about 1 to 1 1/2 teaspoons sesame seed oil as part of the total) 2 Tablespoons soy sauce 1/2 teaspoon salt 2 Tablespoons toasted sesame seeds (optional) 2 cups diced cooked chicken, turkey or pork 1/4 pound fresh bean sprouts (or use 1 can bean sprouts, drained) 1/4 pound fresh mushrooms, sliced 4 green onions with tops, sliced 2 ounce jar sliced or diced pimiento, drained Add enough water to chicken broth to make 2 1/2 cups liquid. Cook rice in liquid according to package directions. Transfer to large bowl. Combine oil, soy sauce, salt and, if desired, sesame seeds; mix well. Stir into hot cooked rice. Cover and chill.
