Fish Batter
2 cup white corn meal 4 large Tbsp. salt 3 1/2 Tbsp. baking powder 1 1/2 Tbsp. red pepper 3 Tbsp. paprika 1/4 tsp. sage 6 large Tbsp. oil 5 lb. all-purpose flour Mix all the ingredients together in a large pan. Sift all together and do this back and forth for 5 times. May be kept in Tupperware containers or in Ziploc baggies and placed in freezer. To use on fish or chicken, mix a little at a time by adding water and making a loose paste. Dip fish or chicken in batter and fry in deep hot oil until golden brown.
