submitted by butterflydog 4 cups boxed complete Baking Mix (I.e Bisquick brand ) 2 cups milk or as needed ( or water or buttermilk at times ) 4 tomatoes or one small carton of cherry tomatoes 1 medium white onion fine chopped 3 green chilies chopped or as desired 1 small bunch of cilantro, chopped salt as needed to taste chili powder as needed to taste oil as needed to coat a heavy duty "non stick" pan My Indian neighbor sometimes uses baking mix to make her Dosai or other Indian breads and says they come out quite tasty although not 100% authentic but often a good substitute recipe . Mix enough milk with baking mix to make a pancake batter consistency. Chop tomatoes, chilies and onions into small pieces and mix with chopped cilantro. Add salt and chili powder to taste. Stir into pancake batter. Using a nonstick pan, wipe pan with an oiled paper towel. Heat pan to medium high. Ladle batter into center of pan and swirl pan quickly to thin out batter to almost fill the pan as if making crepes.. Let brown and bubble ( about 2 minutes ) and carefully flip with spatula to complete browning on the other side. Press down with spatula to prevent puffiness and to cook pancake evenly.
