Default Meatball, Italian Sausage and Zucchini Skewers

Meatball, Italian Sausage and Zucchini Skewers
Serves: 4 Active Time: 20 min Total Time: 30 min

1/2 lb 90% lean ground beef
1 link (1/4 lb) mild Italian Sausage
1 large zucchini, ends trimmed, halved lengthwise, halves cut into 8 equal
pieces
2 tsp lemon-pepper seasoning
2 Tbsp fresh mint, cut in fine strips
2 Tbsp Oil

You'll need: 4 grilling skewers Preheat grill on HIGH 10 min. Shape
ground beef into 8 small meatballs; cut sausage in 4 pieces. Alternate on
each skewer: Zucchini, meatball, zucchini, Italian sausage, zucchini,
meatball, zucchini. Clean grill with wire brush. Using soft cloth, coat
grill grate lightly with vegetable oil. Season both sides of meat and
vegetables with lemon-pepper seasoning. Combine mint with basting oil;
drizzle over skewers (too much oil will cause flare-ups on the grill).
Grill skewers 5-6 min, cover closed, until they have changed color halfway
up from bottom. Turn over; baste (brush with basting oil). Sear 3-4 min.
Turn over; baste. Close cover and cook, 5-8 min. Check internal temp by
inserting thermometer halfway into thickest part of meat. Remove from
grill when internal temp reaches 160 degrees.

Nutrition Info: Each serving (1 skewer) contains 220 calories, 4g
carbohydrate (1g fiber), 17g protein, 15g fat (5g saturated fat), 55mg
cholesterol and 190mg sodium.
