Slippery Jims Pickled Cucumbers
8 large, very ripe cucumbers 1/2 cup salt 1-1/2 cups granulated sugar 2 Tbsp mustard seed 1 Tbsp celery seed 1 Tbsp mixed whole pickling spices 3-1/2 cups cider vinegar Pare and slice cucumbers lengthwise into 4 or 5 inch lengths. Remove seeds. Sprinkle with salt and let stand 24 hours. Place salted cucumbers in colander, drain one hour. In large cooking pot boil sugar, spices and vinegar 5 minutes. Add sliced cucumbers and simmer 20-25 minutes. Pack into hot jars and seal at once. -- Rec.food.recipes is moderated by Patricia D. Hill at .
