Default Chicken and Rice

Chicken and Rice

1/2 pounds chicken Breast or thighs
1 large yellow onion
1 rib celery
1 cup regular rice
2 to 3 peeled and sliced carrots optional
1/2 teaspoon salt
1/2 teaspoon sage or curry powder
1/4 teaspoon black pepper

Boil chicken, onion and celery in just enough water to cover until tender
and chicken is done. Add rice, and carrots if having ,and spices and cook
20 to 30 minutes just till rice is cooked and carrots are tender. Turn
off and let sit covered for ten minutes so rice can absorb water try not
to have too much water. I have sometimes used chicken broth for most of
the liquid.Fluff the rice with a fork.
