Gorilla Sandwich

Gourmet Vegan Cucumber sandwich

1 large (organic ) unpeeled cucumber
Sliced raw fresh fruits of choice ( mango, pineapple, bananas, apples,
etc. etc. ) Dried fruit such as organic raisins, dates etc.
Sliced raw fresh vegetables of choice ( I.E. salad materials - avocado,
onions, mushrooms, arugala,
peppers, etc. etc. ) Chopped /sliced plain nuts of choice

I read about this on the Net and was fascinated. It really was quite
tasty.

Whole Foods sells these sandwiches which were invented by a clever
California man. Called a Gorilla sandwich because a gorilla eats those
healthy raw foods. The Gorilla of course is very strong too!! Cut about
1/4 piece off of a washed and unpeeled cucumber. Hollow out both sections
( get rid of the pulp which contains a lot of water and would make the
sandwich soggy ) of the cucumbers. Stuff ( layer ) your choices of
combinations of raw fresh fruits, nuts, vegetables ( salad ingredients )
into the larger hollowed out cucumber . Invert the pointed end of the cut
off piece of the smaller cucumber to fit into the partially filled
cucumber to act as cover. Also stuff the hollowed out end piece cover if
desired or use it as a container to place some olives , etc. in it. Wrap
in plastic to seal both parts together . Chill well. Eat as a sandwich as
is. Will last a day or two in the refrigerator. Note: I suppose one could
cheat and add some cheese too! Sounds good to me!
