Default Arkansas Cake

Arkansas Cake

1 1/4 cups boiling water
1 cup quick oatmeal
1/2 cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 1/3 cups flour
1/2 tsp salt
1 tsp soda
1/2 tsp cinnamon

Pour boiling water over oatmeal and set aside. Cream butter and sugars;
add eggs. Mix dry ingredients; add dry ingredient with oatmeal mixture to
creamed mixture. Pour into a well greased and floured 13X9-in baking pan.
Bake at 350 for about one hour. While cake is still hot, combine 1 stick
butter, melted, 1 cup brown sugar, 2 egg yolks, 1/4 cup milk, 1 can
coconut and 1 cp chopped pecans. Pour over cake. Put under broiler until
coconut starts to turn. Very Good! Good luck!
