Old Fashioned Peanut Brittle

This is the peanut brittle that we remember as kids, crisp and buttery
with the right amount of peanuts. You make it on the stove but its easy,
especially with a candy
thermometer.

1 cup light corn syrup
2 cups granulated sugar
1/2 teaspoon salt
1 cup water
2 cups raw Spanish peanuts
2 tablespoons butter
2 teaspoons baking soda

Mix the corn syrup, sugar, salt, and water in a large saucepan until the
sugar is dissolved. Cook over medium heat to the soft ball stage or 234
degrees. Add the peanuts. Continue to cook to hard crack stage or 290
degrees, stirring often. Remove from heat. Quickly stir in the butter and
soda and beat with a whisk for a few seconds until a froth forms. Pour
onto two baking sheets, spreading with a spatula to thickness of about
1/4 inch. Let cool and then break into pieces.
