Tomato Rice Skillet
One large chicken breast, sliced into strips one tablespoon olive oil 3 garlic cloves, chopped One 15oz can chicken broth One can condensed tomato soup One bag frozen Italian vegetables (or other favorite mixed vegetables) 1 cup water 2 cups uncooked white rice 1/4 tsp Cumin powder 1/4 tsp Chili powder 1/4 tsp Onion powder Red seasoning salt Cracked pepper In a large, deep skillet with a lid, sautee the chicken strips in the olive oil, and season well during cooking with the spices, salt, and pepper. When chicken is no longer pink in the middle, add the garlic and cook until browned. Then add tomato soup, chicken broth, frozen vegetables, and water. Mix well and bring to a boil. Add the rice, mix well, and bring to a simmer. Put on the lid and let it cook about twenty minutes, stirring once or twice, until rice is done.
