Default Pepperoni Omelet

Pepperoni Omelet

2 eggs
1 Tbsp milk
1 tsp basil
9 slices pepperoni
2 oz. mozzarella cheese
1 roma tomato, chopped

In a bowl, mix the eggs, milk, and basil together. Place a 8 in. non-stick
skillet over medium heat and add egg mixture. Let cook for 5 minutes.
Place pepperoni on half of the egg mixture. Put the mozzarella and tomato
on top of pepperoni. Fold in half with spatula. Let cook 5 more minutes.

Yield: 1 delicious omelet!
