Default Blueberry Fritters

Blueberry Fritters

1 cup flour
2 1/2 tsp. baking powder
4 Tbsp sugar
1/4 tsp. salt
1/3 cup milk
1 egg
1 cup blueberries, floured

Mix dry ingredients together. Beat together egg and milk with a fork. Fold
egg mixture into dry ingredients. Fold in blueberries. Drop by
teaspoonfuls into hot oil for deep frying. Cook on 1 side for about 4
minutes, then turn. Lift out and drain on paper towels. After fritters are
drained, roll in powdered sugar. Put in toothpick in each to serve. Makes
25-28 fritters.
