I'm not sure if this will help you out or not.....when I've made apple pies
out of cooking pears the flavor is very similar. I thought this might be worth a shot. Spiced Pear Jam with Pineapple As it is hard to gauge the acidity of the pear used, taste the jam as it cooks. Add sugar or lemon juice, as needed. Peel and co 3 lbs. firm cooking pears Wash well: 1 orange 1 lemon Put the fruit through a grinder, using a coarse blade. Save the juices. Add to the pulp with: 1 cup crushed pineapple 4 to 5 cups sugar 3 or 4 whole cloves About 6 inches of stick cinnamon 1 one-inch piece ginger Stir the mixture while heating it.
