Easy Lentils
1 lb dried lentils, washed 5 1/2 cups water 1 14.5 oz can diced tomatoes with Italian seasoning with liquid 1 14.5 oz can diced tomatoes with chipotle or other chile seasoning with liquid 1 bunch cilantro, washed, trimmed of stems and chopped 2 cups chicken or vegetable stock (or one 16 oz carton) 1.5 Tbsp garlic powder Optional if meat flavor desired: 1 lb crumbled bulk turkey Italian sausage Or 1/2 cup bacon-flavored TVP crumbles Combine lentils and water in a large pot, bring to a boil, reduce heat and simmer for 40 minutes. Add remaining ingredients, stir well to combine. Bring back to a boil, reduce heat and simmer for two hours. -- Rec.food.recipes is moderated by Patricia D. Hill at .
