Default Blueberry Shrimp Salad


Blueberry Shrimp Salad

dressing:
1/4 cup of vegetable oil
2 tablespoons of lemon juice
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon of ground red pepper
or to taste

salad:
12 ounces cooked medium sized shrimp
6 cups of mixed salad greens
1 1/2 cups of fresh blueberries
2 table spoons of toasted walnut pieces
1/3 cup of edamame or green peas cooked and cooled
2 tablespoons of feta cheese

for dressing: in a small bowl, whisk together vegetable oil, lemon juice,
salt, sugar, and red pepper, remove 2 tablespoons if the vinaigrette to a
large salad bowl.

for salad: add shrimp to bowl with the dressing, toss and let stand for
about 5 minutes.
add salad greens and blueberries; toss with shrimp. evenly divide salad
onto 4 plates sprinkle each serving with walnuts, edamame (or peas) and
cheese. drizzle with a little remaining vinaigrette, if desired.
