As time and resources permit, this can be augmented with capers,
olives etc. 3 basa fillets, about 1.25 lb. Other mild-flavored firm white fish will do as well 1 large green (Bell) pepper cleaned and cut into fine strips 1 medium yellow or white onion cut into thin rings 1 cup chopped fresh cilantro if desired 1 14.5 oz can diced tomatoes with chile seasoning. Our local market has a chipotle one that's great, but others would do. 1/2 packet Goya vegetable seasoning or 1/4 tsp garlic salt and 1/2 tsp garlic powder. Olive oil Place pepper and onion (and cilantro if used) in a pan with 2 tsp olive oil and seasonings, mix and microwave or saute until softened but still holding shape. Add tomatoes and mix. Arrange fish in oiled glass or ceramic baking dish one fillet deep. Spoon drained vegetable mixture over fish. Bake in 350 F oven about 30 minutes.
