Baked Snapper
1 3/4 lbs filet snapper salt and pepper 1/2 cup oil 1 large onion sliced 5 new potatoes sliced 2 ribs celery, chopped 2 cloves fresh garlic juice of 1/2 lemon 3 med. tomatoes, chopped Wash filets. Rub lemon juice on fish. Salt and pepper. Saute onion in oil. When onion is translucent, add tomatoes, garlic and celery. Simmer over low heat. Add potatoes and simmer for about 10 more minutes. Lightly oil a baking pan/ Place fish in the pan and pour the tomato-potato mixture over the fish. Add 1/2 cup of water and cover with aluminum foil. Bake at 350 for one hour. Capt.
