Baked Snapper with Tomatoes
1/2 cup olive oil 2 large onions, chopped 1 16 oz. can of tomatoes 1 garlic clove, pressed 1/2 cup chopped fresh parsley 1/2 cup white wine dash of salt pepper 3 lbs. snapper fillets Heat olive oil in saucepan, add onions and cook until translucent. Add tomatoes, wine, parsley, salt and pepper. Simmer, covered for about 10 minutes. In last five minutes add fresh garlic. Place fish in baking dish. Cover with sauce and bake at 350 degrees for about twenty five minutes. Fish should easily flake, but remain moist. Capt. Anderson's -- Rec.food.recipes is moderated by Patricia D. Hill at .
