Catfish Amandine
Amandine is a French term that means "garnished with almonds." 1/4 cup butter or margarine, melted 3 tablespoons lemon juice 6 farm-raised catfish fillets (about 2 pounds) 1 1/2 teaspoons Creole seasoning 1/2 cup sliced natural almonds Combine melted butter and lemon juice in a shallow dish. Dip fillets in butter mixture, and place in an ungreased 13- x 9- x 2-inch baking dish. Sprinkle fillets evenly with Creole seasoning. Bake, uncovered, at 375 for 20 minutes. Sprinkle fillets evenly with almonds, and bake an additional 10 minutes or until fish flakes easily when tested with a fork. Transfer fillets to a serving platter. Serve immediately.
