Default Donny Mac's Nashville Hot Chicken

Donny Mac's After Burner Chicken

This chicken has only a very mild "after burn", thus the name.

1/2 cup low sodium soy sauce
2 tsp fine ground white pepper
1 Tbsp crushed red pepper (use mortar/pestil and smash it up a few
minutes)
2 tsp garlic salt
2 tsp sesame ginger blend available at grocers
3/4 cup flour
2 tsp cocoa powder
(Makes enough for 12 drumsticks, vary mix for amount of chicken)

Mix all dry ingredients in a medium-sized glass bowl w/fork until
thoroughly blended Put soy sauce in a medium-sized glass bowl (large
enough for dipping chicken pieces) Remove skin from chicken (I use
drumsticks, but it could be thighs, wings or breasts) Wash chicken
thoroughly to remove any blood or slimy layer beneath skin Dip each
chicken piece into soy sauce and coat thoroughly. Be sure to let all
excess soy sauce drip from chicken piece before placing in batter. Next,
dip each soy coated chicken piece into chicken batter prepared in first
step and be sure to coat all exposed chicken. Place each chicken piece on
plate Place 2 cups of vegetable shortening in an electric skillet and heat
to 325 degrees Add another 1 Tbsp of crushed red pepper to hot oil prior
to placing chicken in skillet Carefully, add chicken pieces to skillet so
not to splash the hot oil Turn chicken pieces every 5 minutes for the next
35-40 minutes depending on chicken thickness Place on paper towel covered
dish or plate and allow to drain Be sure to cut off skillet or stove after
chicken has finished cooking!

If you are in the mood for some truly HOT chicken...prepare my "Donny
Mac's Atomic Chicken Rub" BEFORE you cook the chicken!

***Donny Mac's Atomic Chicken Rub***

The key to this effect, is to apply it to Donny Mac's Hot Chicken right
out of the skillet (do NOT drain it or allow it to cool first!)

BEFORE cooking chicken...

In a medium-sized glass bowl, place the following ingredients:

3 Tbsp fine ground cayenne pepper
1 Tbsp crushed red pepper
2 tsp white pepper
3 Tbsp granulated sugar (for sweeter taste, use powdered sugar)
1 tsp Hershey's cocoa powder

Mix all ingredients with a fork until thoroughly blended Now prepare
Donny Mac's After Burner Chicken as above... Using metal tongs, (do not
use fingers!) dip Donny Mac's Hot Chicken straight from the skillet into
this rub and turn to coat each piece thoroughly on all sides Place chicken
on a glass plate or corning ware dish to cool. Consume with caution and
plenty of non-carbonated liquid refreshment nearby. This may also be
reheated in a microwave later, but the pepper flavor will only get
stronger as time goes on!
