Arkansas-Fried Catfish, Home Style

Fried Catfish, Home Style 4 pounds catfish Salt and pepper 1/4 cup bacon drippings or lard Juice of 1 lemon 1/4 cup chopped parsley Clean and skin catfish and pat dry. Sprin* kle with salt and pepper. Saute in hot bacon drippings or lard over moderate heat until browned on both sides. Drain fish on paper towels and place on hot serving dish.
