Default Sweet Potato Pudding

Sweet Potato Pudding

3 sweet potatoes, large
3 tablespoons butter
2 eggs
1/4 cup sugar
sufficient milk to make mashed potatoes very soupy
zest of one lemon, grated
salt
1-2 teaspoon lemon extract
nutmeg, optional

Boil potatoes until fork tender. Peel hot potatoes and mash with sugar and
butter. Use about one tablespoon of butter per potato. Slightly beat eggs
and add to potatoes. Add lemon zest and stir. Add sufficient milk to
create very soupy potatoes. Now add 1 to 2 teaspoons of lemon extract. Add
salt to taste. Nutmeg can also be sprinkled over the potatoes as an
option. Bake at 350F until done. Serves 6.
