Two Loaves
 
Two Loaves

1 1/2 cups (625mL) water, lukewarm
1 tablespoon (15mL) honey
1 cup (250mL) raisins (optional)
1 tablespoon (15mL) dry yeast
2 cups (500mL) flour
2 tablespoons (30mL) oil
2 tablespoons (30mL) molasses
1 egg; whipped
2 teaspoons (10mL) salt
4-4 1/2 cups (1125mL) whole wheat flour
butter; melted (optional)

In large bowl of mixer dissolve honey in warm water; add raisins and sprinkle the yeast on top. Let sit about 10 minutes and yeast is foamy.

Add the flour; beat well.

Stir in egg, oil, molasses and salt.

Stir in a portion of the flour and beat to develop gluten. Change to spiral bread hook. Mix at level 2 enough of flour to form a ball.

Turn out and knead 10 minutes. Place in oiled bowl, cover and let rise until doubled.

Knead down and let rise again.

Knead and divide into loaves. Place in greased loaf pans. Brush tops with melted butter Let rise until doubled.

Set oven to preheat: 375F (190C).

When loaves have risen bake in the preheated oven for 35 minutes.
