Baked Cornflake Chicken

4 boneless skinless chicken breasts
4 egg whites
2 cups corn flakes
1 tablespoon garlic powder
salt and pepper -- to taste

Preheat oven to 375°F. Combine crushed cornflakes, garlic powder,
salt, and pepper in a mixing bowl. Coat chicken with egg whites and
drag them through the cornflake mixture. Place chicken in a lightly
greased baking
dish and bake in oven for 35-45 minutes.

Broiled Dijon Chicken Breasts

1/3 cup light mayonnaise
2 tablespoons grated Parmesan cheese
1 tablespoon Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon pepper
4 boneless skinless chicken breast halves


Heat broiler. Line a broiler-pan rack with foil for easy cleanup. Mix
all ingredients except chicken.

Place chicken smooth-side down on lined rack. Brush with half the
mayonnaise mixture. Broil 4-6" from heat source 6 minutes. Turn
breast over and brush with remaining mayonnaise mixture. Broil 6
minutes longer or until chicken is cooked through and lightly browned.

Santa Fe Chicken

1 pound boneless skinless chicken breasts
1/4 cup orange juice, from frozen concentrate
2 tablespoons dry white wine
1 tablespoon honey
1 clove garlic -- minced
1/2 teaspoon cinnamon
1/4 teaspoon chili powder
1 dash ground red pepper

Preheat oven to 375°F. In a shallow baking pan, arrange chicken in a
single layer. In a small bowl, combine remaining ingredients. Pour
over chicken. Cover and refrigerate 1 hour. Bake chicken,
uncovered, about 45 minutes. Baste occasionally.

Spicy Parmesan Chicken

4 4 ounce boneless skinless chicken breasts
1/4 cup cornmeal
1/4 cup grated Parmesan cheese
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon oregano
salt and pepper -- to taste

Put cornmeal, Parmesan cheese, paprika, cayenne pepper, oregano, salt,
and pepper in a Ziploc bag. Shake to mix.

Drop chicken breasts into mixture one at a time and toss to coat.

Bake chicken in a nonstick baking pan at 350°F for 20-30 minutes.
