![]() Cranberry Ham Baked Ham Slice with Barbecue Sauce Broccoli and Ham Casserole Ham and Spinach Bake Kentucky-Style Ham in Cream Potatoes with Ham au Gratin Smoked Ham Slice With Apricot Glaze Barbecue Ham Slice Request From: "Lynn B. Archer" > At the supermarket they sell ham slices. I am looking for tasty ways to fix them. Thanks Cranberry Ham 1 fully cooked smoked ham steak, 1-inch thick, or thick slices for 4 servings 1 small can (8 ounces) whole cranberry sauce 1/4 cup light corn syrup 1 to 2 teaspoons whole cloves, or 1/2 teaspoon ground cloves Slash fat around edges of ham, if necessary. Place ham in a shallow greased baking dish. Combine cranberry sauce and corn syrup. Stick whole cloves in ham fat around the edges, or stir ground cloves into sauce. Pour sauce over ham. Bake at 325° for 30 to 40 minutes, basting occasionally with the sauce. Ham recipe serves 4. Baked Ham Slice with Barbecue Sauce 1/4 cup chopped onion 1 tablespoon butter 1/2 cup ketchup 1/3 cup water 2 tablespoons brown sugar 2 tablespoons vinegar 1 tablespoon Worcestershire sauce 1/2 teaspoon salt 1/4 teaspoon pepper 1 fully cooked ham slice, about 1-inch thick In a saucepan over low heat, melt butter; add onion. Sauté onion until tender; add ketchup, water, brown sugar, vinegar, Worcestershire sauce, salt, and pepper. Place ham in baking dish; pour sauce over. Bake at 350° for 30 minutes Broccoli and Ham Casserole 2 cups chopped, cooked ham 1 (10 oz) pkg. frozen broccoli 1 cup cooked rice 1 can cream of celery or mushroom soup 1 cup shredded cheddar cheese 1 small onion, chopped (optional) 1/2 cup sour cream 1/2 cup buttered bread crumbs salt and pepper to taste Combine all ingredients except croutons. Place in ovenproof casserole dish. Spread bread crumbs. Bake 1 hour at 325°, or until browned and bubbly. Ham and Spinach Bake 10 ounces frozen chopped spinach 2 tablespoons butter 2 eggs, beaten 1/3 cup milk 2 tablespoons chopped onion 1 tablespoon chopped pimiento 1/2 teaspoon dry mustard 1/4 teaspoon dried basil, crushed 1/8 teaspoon salt 1 cup diced ham 1 cup shredded Swiss cheese French-fried onions for topping Cook spinach and drain well. Stir in butter until melted. In a medium bowl, combine the eggs, milk, onion, pimento, mustard, basil and salt. Stir in ham, cheese and spinach. Pour mixture into a buttered 1 1/2-quart baking dish. Bake at 350 degrees for 30-35 minutes or until knife inserted into the center comes out clean. Let stand for 10 minutes before serving. Sprinkle top with French-fried onions. Serves 4 to 6. Kentucky-Style Ham in Cream Heritage of Southern Cooking - Camille Glenn 5 tablespoons butter 1/2 pound mushrooms, sliced if large 3 tablespoons all-purpose flour 2 cups milk 1/2 cup heavy or whipping cream 2 cups cubed baked ham salt and freshly ground white pepper -- to taste Melt 2 tablespoons of the butter in a medium skillet. Add the mushrooms and sauté over medium-high heat until they absorb the butter but are still somewhat crisp. (They must not brown.) Set them aside. Melt the remaining butter in a heavy saucepan or skillet over medium heat. Add the flour and mix with a whisk until smooth. Whisk in the milk gradually. Cook until the sauce thickens and is smooth, 3 minutes. Add the cream, ham, and mushrooms. Season with salt and white pepper to taste. (Watch the salt because of the ham.) Heat thoroughly, and serve immediately. Serves 6. Author's note: This is also delicious accompanied by poached apples that have been cut in half and dolloped in the center with a teaspoon of currant jelly. Potatoes with Ham au Gratin 4 cups diced potatoes 2 cups chopped green onions 5 tablespoons butter 5 tablespoons all-purpose flour 2 1/2 cups milk 2 tablespoons Worcestershire sauce 1/2 teaspoon prepared yellow mustard 1 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon paprika 4 pimiento, diced 2 cups cheddar cheese, grated 2 cups ham, cubed 1/2" 1/2 cup plain bread crumbs 4 tablespoons butter In a saucepan cook potatoes and onions together in lightly salted water until tender, 12 - 15 minutes. Drain. To make white sauce melt butter in a medium saucepan. Add flour stirring until blended. Cook and slowly stir in milk. Add Worcestershire, mustard, salt, pepper, paprika and pimiento. Stir until thick. Place 1/2 of the cooked potatoes and onions in a large buttered 3-quart baking dish. Cover potatoes with 1/2 of the cheese. Spread all the ham on the cheese. Cover with remaining potatoes. Pour white sauce over all. Sprinkle remaining cheese on top. Place bread crumbs on cheese. Dot top with butter. Bake in preheated 350 degree F oven until top is melted, about 10 minutes. Yield: 6 to 8 servings. Smoked Ham Slice With Apricot Glaze Smoked ham slice, cut 1 inch thick 1 can apricot halves 1/2 tsp. ground cloves 1/4 tsp. allspice 1/2 tsp. cinnamon Drain apricots and save juice. Place ham slice on broiler rack and insert broiler rack and pan so the top surface of the meat is 2 to 3 inches from the heat. Sprinkle with spices and broil until nicely browned, about 10 minutes, basting occasionally with apricot juice. Turn, sprinkle ham with remaining spices, continue broiling, basting with apricot juice until done, about 10 minutes. Five minutes before ham slice is done, arrange apricot halves, cut surface down, on ham and continue broiling until ham is done and apricots are lightly browned. Spoon basting liquid over ham and apricots before serving. Serves 4 to 6. Barbecue Ham Slice 2 ham slices (1 inch thick) 1/3 cup horseradish 1 cup brown sugar 1/4 cup lemon juice Mix horseradish, sugar, and lemon juice. Score ham slices on both sides. Have grill set on low to medium heat. Each ham slice is grilled 15 minutes per side, basting with the horseradish mixture.
