Chilean Fruit Salsa
Cabbage Mold (Bolo de Repolho) Reqeust From: MaryMc <marymc11@ SPAM.BEGONE mindspring.com> I'm going to a potluck next month with a Latin American theme. They're providing the meats, so they're asking for just side dishes and desserts. I need something that will travel well (I live an hour away) and won't need to be heated on-site. Any suggestions will be much appreciated! Chilean Fruit Salsa 2 cups diced fruit (nectarines, peaches, plums, kiwifruit...or any combination) 2 Tbsp cilantro 1/2 ripe avocado, diced 1/2 cup chopped red onion 1/2 jalapeno, seeded and finely chopped Juice of one lime Salt and pepper to taste Combine all ingredients in a small bowl. Serve over grilled salmon. Makes approximately 3 cups. Cabbage Mold (Bolo de Repolho) 1 medium-sized head cabbage 3 eggs, beaten 1 tablespoon melted butter 1 tablespoon flour 1 cup milk 3/4 teaspoon salt Cut cabbage in fine shreds and cook in salted water for 15 minutes. Drain and cool. Mix eggs, butter, flour, milk, and salt with cabbage.
