Default Salsa

Salsa

1 can Green Chilies
2 large ripe Tomatoes, seeded and diced small
1-1/2 heaping tsp. bottled Garlic
1 large Onion, minced
2 or 3 Jalapenos Peppers, roasted, peeled and seeded, mince fine
2 Tbsp. Vinegar
1/2 tsp. Cumin
Salt and Pepper, to taste
2 Tbsp. Olive Oil

Saute Onion and Garlic in oil until soft. Drain with a slotted spoon. Add
rest of ingredients. Bring to a boil in saucepan. Reduce to simmer and
simmer 10 minutes. Cool and put in quart jar or other container. Chill
overnight before using.

* Add 1/4 cup snipped Cilantro if you like it.
