Chinese Red Bean Sesame Balls
Jin Dui (Chinese Sesame Balls filled with Red Bean Paste) 6 oz. sweet potatoes 10 oz. red bean paste (Can be found in Asian groceries, canned) 1 1/2 cups glutinous rice flour 1/3 cup all-purpose flour 2/3 cup white sesame seeds 2 Tbsp. sugar 1/2 cup hot water Peel sweet potatoes and boil until tender, then mash them. Sift the rice flour and plain flour together, then blend with the sugar and mashed sweet potato. Knead mixture well and sprinkle in the hot water. Knead dough into small balls and roll each ball into a round, flat shape. Spoon on some red bean paste and knead back into balls. Coat balls with cold water, then roll thoroughly in sesame seeds.
