Herb Battered Baked Chicken

2/3 cup bottled Ranch Dressing with 1 Egg beaten into it
1 cup Flour
2 cups cornflake Crumbs
3-lb. Chicken Pieces
Salt and Pepper
Preheat Oven to 350 degrees

Pour dressing mixture onto a shallow plate. put flour, salt and pepper in
a plastic bag. Put cornflake crumbs in a shallow pan. Prepare a large
rectangular pan with rack in it, by spraying with non-stick spray, both
pan and rack. Have a tray ready and put chicken a few pieces at a time in
bag with flour and shake to coat. Lay out on tray. Repeat until all
chicken is coated. Roll chicken pieces in ranch dressing mix and then in
cornflake crumbs and lay each piece on rack in pan. You can lay chicken in
a pan without a rack, but it is not as crispy and nice on the bottom. Bake
one hour, uncovered, turning once after the first 30 minutes of baking.
