This is how I make my coconut tapioca. Note that the milk can be almost
any kind - I use 1% because that is what we drink, and it works just fine. Sometimes I add a little half and half to it, but that is rare. Also, make sure it's unsweetened coconut milk that you use. Do not use the cream of coconut that you'd use for a mixed drink... 1/3 cup sugar 1/3 cup tapioca (I use the quick cooking kind) 2 cups milk 1/2 coconut milk 1 egg, beaten 2 green cardamom pods, tapped to crack (optional) 1 teaspoon vanilla Mix all of the ingredients, except vanilla, and stir well. Let sit about 5 minutes. Turn on the heat, and stir constantly on a medium-high temperature. You'll be stirring for a while! The mixture will eventually come to a complete boil; keep stirring for about 1 - 2 minutes, and then remove from heat. Add the vanilla, and stir well. Let cool. You can eat the pudding warm or cold!
