Default Puerto Rican Green Banana Escabeche

Hi kelli...

I'm sorry it took so long for me to reply... this is what I posted on
rec.food.cooking a while back... I hope it helps:


Set a pot of salted water to boil that can accomodate the bananas... Cut
off
the ends and score them lengthwise on opposite sides... Place bananas into
boiling water and let them cook for about 5-10 minutes or until the peels
are softer... In the meantime, set another smaller pot of salted water to
boil... Remove the first pot from the heat and pour out the water...
Carefully remove the peel from the bananas and place them into the new
pot... toss out the peels... they should come right off with no problem...
Cook the bananas 5-10 minutes more or until they are cooked through...
Serve
them with just a drizzle of olive oil on them.

or...

prepare escabeche with them...

3:1 ratio of olive oil to white vinegar to which you add a tablespoon of
peppercorns, 1 thinly sliced onion, 1 bay leaf, 2 mashed garlic cloves,
salt
& pepper to taste... heat this up until the onion becomes opaque and pour
over the cooked green bananas that you've sliced into 3/4 inch rounds..

or...

prepare like twice fried plantains (tostones)...

cut peeled raw bananas into 3 diagonal slices...

place it into cold salted water to which you've added 2 cloves of garlic
you
crushed with the blade of a knife, skin and all... leave in this for 10-15
minutes... fry in oil until you pierce them easily with a fork, turning
once
only... remove to a plate and mash them between 2 foam plates (i don't
think
you have a tostonera!!!) as fast as you can, to about 1/4-1/2 inches
thick... set them aside until you've done them all... if you see that it's
taking too long remove the frying pan from the heat until you're done...
dip
the pieces in the seasoned water briefly and fry whatever fits in your pan
for a minute on each side... repeat as often as necessary...

serve them with your meal or eat as is... i like mayo-ketchup on mine...
mayo, ketchup and garlic powder smoothed together...
