Spinach & Cheese Quiche Balls
Jean's Spinach Balls



Spinach & Cheese Quiche Balls

Two 10 ounce packages of frozen spinach, cooked & drained well
4 beaten eggs
3/4 cup of melted butter
2 cups of Pepperidge Farm herbal stuffing mix
1 cup of grated Parmesan cheese
1 small onion, chopped fine
1/2 teaspoon of thyme
Dash of garlic salt

Mix all ingredients well. Put in refrigerator for several hours. Roll
mixture into small balls, about 1 inch in diameter. Place on ungreased
baking sheet. Bake at 350ºF. for 15 minutes.

Jean's Spinach Balls

6 eggs
2 10 oz. packages frozen spinach drained and squeezed dry
2 cups herb stuffing mix (I used Pepperidge farm)
1 large onion grated
1 cup parmesan cheese
3/4 cup butter
1 tsp. poultry seasoning (optional)
salt and pepper to taste


Preheat oven to 350 degrees
Beat eggs in large bowl. Add remaining ingredients and blend well.
Form into walnut size balls.
Put on greased cookie sheet.
Bake about 20 minutes till golden.
Serve with prepared horseradish/mayonnaise sauce mixed with honey
mustard for dipping.
