Nutty Zucchini Bread with Lemon
Ingredients
* 1/2 cup butter, softened * 1 cup brown sugar * 2 eggs * 1 1/2 cups of grated Zucchini * 1/2 teaspoon lemon extract * 2 cups all-purpose flour * 3 teaspoons baking powder * 1/2 teaspoon salt * 1/2 cup chopped pecans Directions 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. 2. In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the zucchini. In a separate bowl, sift together flour, baking powder, and salt. 3. Blend the Zucchini mixture into the flour mixture; stir just to combine. Fold in walnuts. Pour batter into prepared pan. 4.
