Chicken Casserole

1 pkg. Escort crackers, crushed
1/2 cup (1 stick) margarine
4-5 chicken breasts, cooked, deboned & chopped
1 can cream of mushroom soup
1 can cream of celery soup
8 oz. container sour cream

Melt margarine. Mix with crackers. Press into baking dish and on sides.
Mix chicken, soups and sour cream. Put half on crackers. Add layer of
crackers another layer of chicken mixture. Top with cracker crumbs. Bake
at 400 degrees until hot and bubbly and crackers are brown.



Baked Chicken Squares

9 slices white bread
4 cup cooked, chicken, deboned and cut in small pieces
8 oz. mushrooms
1/2 cup butter
1 can water chestnuts, sliced
1/2 cup mayonnaise
9 slices American cheese
4 eggs
1 can each cream of mushroom, cream of celery soup)
2 cup milk
1 jar pimento (optional)

Grease (or spray with non stick cooking spray) 9 x 13 inch baking pan.
Line pan with bread. Cover with chicken. Saute mushrooms in butter.
Spoon over chicken. Add layer of water chestnuts. Spread mayonnaise on
top of this and cover with a layer of American cheese. In separate bowl,
beat 4 eggs well. Add soups, and milk to eggs. A small jar of pimento
may also be added. Mix well and pour over casserole. Refrigerate several
hours or overnight. Bake 1 1/2 hours at 350 degrees. Remove from oven
and let sit 10 to 15 minutes. Slice into squares and serve.



Easy Elegant Chicken Casserole

1 1/4 cup raw rice (not Minute Rice)
1 can cream of chicken
1 can cream of celery
1 can cream of mushroom soup
1/4 lb. butter
1/2 cup sherry (cooking dry)
1 1/2 pkg. shaved almonds (3 oz.)
1 pkg. Parmesan cheese (3 oz.)
6 to 8 boned chicken breasts (bones and skinned)

Place rice in bottom of large casserole (large and shallow so breasts can
be placed side by side). Mix soups, butter and sherry together. Pour
about a cup or so over the rice mixture and blend to moisten all the rice.
Pour remaining soup mix over raw chicken. Put cheese, almonds on top.
Sprinkle paprika over all. Bake 2 1/2 hours at 275 degrees (cover with
foil.)

Chicken & Rice (Bone In)

1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup
1/2 cup milk
1 cup uncooked rice
1 Tbsp. onion flakes
1 fryer chicken
1 cup margarine, melted
Corn flake crumbs

Mix soup, milk, rice and onion flakes. Pour into large casserole dish.
Cut chicken in pieces and lay on top of rice mixture. Pour melted butter
on top and sprinkle with corn flake crumbs. Bake 3 hours at 250 degrees.
