Lemongrass Soup - Tom Yum
submitted by dave This is a basic recipe for Lemongrass Soup (Thai, "Tom Yum"). Feel free to use this as a base and add vegetables or replace meat for the seafood. 8 cups chicken stock 1/2 - 1 bunch cilantro 1 can straw mushroom 16 large shrimps, peeled, deveined 1 cup snow peas 1/3 cup shredded carrots (just for color) juice of 1 lime 1/2 - 1 tsp. crushed red pepper 1 chili pepper, cut into rings 4 Tbsp. nam pla (or nuoc nam in Vietnamese -- anchovy sauce, can be found in most Asian food stores and some supermarkets) a few stalks of lemongrass (I would use about 6) Bring the broth to a simmer. Add crushed red pepper and shrimp and simmer for 5 min. Add lemongrass and simmer for another 5 min. Add the rest of the ingredients and simmer a few minutes more.
