Chicken Apple Sauté

Amount Measure Ingredient -- Preparation Method
-------- ------------- --------------------------------
2 tablespoon vegetable oil
1 pound chicken --skinned boned
cut into strips
1 medium green pepper --sliced lengthwise
1 medium onion --sliced lengthwise
1 cup diagonally sliced celery
1 golden delicious apple --cored and sliced
1/2 cup apple juice
1 tablespoon white vinegar
2 teaspoons soy sauce
1 tablespoon cornstarch

Heat oil in non-stick skillet or wok. Sauté chicken until no longer
pink; remove from pan. Sauté green pepper, onion and celery until
tender-crisp. Return chicken to pan; add apple and cook for 1 minute.
Combine remaining ingredients; add to apple mixture and cook until sauce
thickens.
