Default Everything muffins

Everything Muffins

Michelle, these are not exactly what you're looking for, but substitute
the
ingredients until you get the mix you want!

These muffins are moist and delicious! Makes 2 dozen.

2 1/2 cup flour
1 1/4 cup sugar
3 tsp. ground cinnamon
2 tsp. baking soda
1/2 tsp. salt
3 eggs
3/4 cup applesauce
1/2 cup oil
1 tsp. vanilla
2 cup grated carrots
1 medium tart apple, peeled and grated
1 can (8 oz) crushed pineapple, drained
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped nuts

In a large bowl, combine the first five ingredients. In another bowl,
combine the eggs, applesauce, oil and vanilla. Stir into dry
ingredients just until moistened (will be thick). Stir in carrots,
apple, pineapple, coconut, raisins and nuts. Fill greased or
paper-lined muffin cups 2/3 full. Bake at 350 degrees for 20-24
minutes or until a toothpick comes out clean. Cool for 5 minutes
before removing from pans.
