Just in time for the holidays:
What to do with extra pumpkin. Barrigas de Vieja = "Old Lady Bellies" Pumpkin Fritters (Barrigas De Vieja) Cuban, Puertorrican, Pumpkin, Veg-Fried 1 1/2 lbs pumpkin; peeled, cut in chunks 2 Tbsp salt 2 liters water 2 Tbsp butter or margarine 1 cup sugar 1 egg 1 cup flour, all-purpose or self-rising 3/4 tsp vanilla 1/4 tsp cinnamon 1/4 tsp nutmeg; optional 1/2 lb shortening; or 1 cup oil Boil pumpkin in a large, covered pot with salted water at high heat for 30 minutes. Drain water and mash pumpkin, then drain again. Mix 1 1/2 cups of mashed pumpkin together with butter, egg and sugar. Sift flour with nutmeg, cinnamon and vanilla and add to pumpkin mixture. Drop by spoonfuls into heated oil. Oil should be enough to cover fritters. Cook until both sides are lightly browned and serve hot.
